Countdown to Thanksgiving... Day 1 Turkey Brine

Oh this week has finally arrived.  Things are beginning to take on that holiday feeling.  We've planned the meal and looked at recipes. We've firmed up the invite list and we have checked that everything is coming along.  The kids are out of school here so they are definitely under foot.  The little ones aren't sure why there is so much going on and why we are buying things that they "can't eat yet!"  So... are you ready for Thanksgiving? I think that I a going to brine my turkey and then bake it.  Here is my brine recipe.. it's much like other's so if you have a favorite one, use it :-)

Turkey Brine - 12-14 pound turkey
2/3 cup salt
1/2 cup plus 2 tbs brown sugar
1/2 cup black pepper, cracked
Pinch dried thyme
13 cloves
13 allspice, cracked or 1 tbs ground
3 bay leaves
Water - enough to cover turkey

Let this marinade from 6 hours to overnight... drain, pat dry, place in roasting pan .  Roast at 450 degrees for 15 minutes, turn turkey to other side for another 15 minutes and then turn turkey breast side up for 15 minutes.  

Reduce heat to 325 and roast  for about 2 hours or until the thermometer reads 160-165 degrees.  Let it rest for 20 minutes before carving.
